Fresh, fruity, creamy - the perfect summer salad with burrata
When crispy Romana salad meets grilled zucchini, sweet peaches and creamy burrata, a wonderfully light summer dish is created that is not only visually enthusiastic. Rounded off with a finely coordinated honey balamico dressing and topped with crunchy pistachios, this salad combines hearty vegetables and fruity sweetness into a harmonious composition. Ideal as a light lunch or elegant starter - uncomplicated in preparation and full of taste.
Ingredients (for one person):
- 1 Little Romana Salad
- 1/2 zucchini
- 1 peach
- 1 Burrata
- Some chopped pistachios
For the dressing:
- 2 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar organic
- 1 teaspoon honey
- some salt
Preparation:
- Wash the vegetables and fruit. Cut the salad into bite -sized pieces, cut the zucchini and peach into slices.
- Fry the zucchini in a coated pan.
- In the meantime, the dressing can be prepared. Mix all the ingredients and stir into a uniform mass. Season with salt.
- Now the salad can be served. Put the salad, peach and the fried zucchini in a bowl, spread the dressing, place the burrata on it and serve with the chopped pistachios.
