Superfood salad

 

  • 1 sweet potato (medium -sized)
  • 200 g broccoli
  • 1 teaspoon olive oil
  • Salt & pepper at will
  • 200 g Roter Quinoa
  • 2 carrots
  • 2 handful of radishes
  • 1/2 lettuce cucumber
  • 2 handful of lettuce
  • 1 TL chia seeds (topping)
  • mint

 

For the dressing:

  • 3 tablespoons of olive oil
  • 2 tablespoons of apple cider vinegar
  • 1 - 2 teaspoon of lettuce herbs
  • Messer tip honey

 

preparation

Step 1:

Boil the quinoa in double amount of water until the whole liquid is absorbed. Remove from the stove and let it cool until the rest of the recipe is finished.

Step 2:

Preheat the oven to 180 ° C and lay out a baking sheet with baking paper. Peel the sweet potatoes, dice them and put them on the sheet. Brush with a little olive oil, season with salt and bake in the oven for 20 minutes. Then wash the salad, cucumber and radishes, cut it and divide them into two bowls. Peel the carrots, grate them into small pieces and also put them in the Bowls. Wash the broccoli, divide it into small florets and cook in a little water for 5 minutes. Then fill up the water and also add the broccoli to the Bowl.

Step 3:

Put the olive oil, salad herbs, a little honey and apple cider vinegar in a small bowl and mix well until a creamy consistency is created - add water if necessary.

Step 4:

Spread the sweet potatoes and the cooked quinoa over the bowl, spread the chia seeds on top, add some mint and spread the sauce over the bowl.
