Vegetable rice salad

Vegetable rice salad

  • Preparation: 20 minutes
  • Total period: 45 minutes
  • for 4 portions

 

Ingredients:

500 g wild rice

1 zucchini

1 yellow paprika

2 carrots

6 tablespoons of olive oil

6 tablespoons of verjus

1 tablespoon Universal spice

1 tablespoon of coconut oil

Fresh herbs (e.g. parsley, rosemary, thyme, sage)

Optional: Mozzarella (vegan as required)

 

Directions:

 

  1. Cook the rice according to instructions. Then put it in a large bowl and chill.
  2. Wash the zucchini, peppers and carrots and cut them into small pieces.
  3. Put the vegetables together with coconut oil and universal wort in a saucepan and steam for about 15 minutes over medium heat.
  4. Add olive oil, verjus and herbs to the rice and mix well. Add vegetables and fold them carefully - as well as Mozzarella, if desired.
