Vegan Oatdrink powder pancake with date-cinnamon sauce
Recipe idea with the OAT drink powder for 4 people
Ingredients for the pancakes:
- 150 g of flour (e.g. spelled flour)
- 2 tablespoons of oatdrink powder
- 1 teaspoon wine stone baking powder
- 1 tablespoon of sugar or sweetener of your choice
- 1/2 TL cinnamon
- 250 ml of water (or herbal milk of your choice)
- 1 teaspoon vanilla stag (tolerance, small quantities are usually well tolerated)
- 1 tablespoon of apple cider vinegar (makes the pancakes fluffier)
- 2 tablespoons of vegetable oil (e.g. rapeseed oil) for roasting
Ingredients for the date-cinnamon sauce:
- 100 ml date syrup
- 1/2 TL cinnamon
- 1 teaspoon coconut oil
- 1 pinch of rock salt
Preparation:
✨ First mix the drying ingredients in a large bowl, i.e. mix the flour, oatdrink powder, baking powder, sugar and cinnamon. Now add the wet ingredients: add water, vanilla pulp and apple cider vinegar to the dry ingredients and stir everything into a smooth dough. If the dough is too thick, add a little more water.
✨ Heat some vegetable oil in a pan and add a small trowel dough. Bake the pancakes on each side for about 2-3 minutes until they are golden brown. Repeat the process with the rest of the dough.
✨ Heat the date syrup in a small saucepan for the sauce. Add cinnamon, coconut oil and a pinch of rock salt and stir well until everything has mixed.
✨ Stack the warm pancakes and pour the date-cinnamon sauce generously. You can add fresh fruit such as berries or nuts as topping.
