Paprika spread-polenta-taler with Caramelized onions and goat cheese

Recipe idea with our paprika spread for 2-3 people

Ingredients:

  • 200 g polenta
  • 700 ml of vegetable broth
  • 150 g of paprika spread
  • 2 tablespoons of butter
  • 2 white onions, cut into rings
  • 1 tablespoon of brown sugar
  • 2 tbsp balsamic vinegar
  • 100 g goat cheese (soft)
  • 1 tablespoon of olive oil
  • Fresh thyme leaves for garnish
  • Rock salt to taste

Preparation:

✨ Boil the vegetable broth in a saucepan and then let the polenta slowly sprinkle and cook with constant stirring for about 5-7 minutes until it thickens. Now stir in the paprika spread and butter, season with rock salt.

✨ Pour the polenta onto a baking sheet or a flat surface and smooth so that it is approx. 1-2 cm thick. Let it cool completely so that it becomes solid (approx. 30 minutes).

✨ Heat the olive oil in a pan and fry the onion rings over medium heat for about 10 minutes until they are soft. Then add the brown sugar and the balsamic vinegar and have another 5 minutes caramelized. Season with some rock salt.

✨ Now cut the circles from the cooled polenta with a glass or cutter (approx. 5-7 cm in diameter). Fry the Polenta Taler in a pan with a little oil from both sides until golden brown and crispy.

✨ Arrange the crispy polenta talers on a plate, top with caramelized onions and crumble goat cheese on top. Finally, garnish with fresh thyme leaves.
